Healthy Bruschetta for kids

 

Classic Bruschetta


Want more entertaining toast appetizers? For the ideal crostini spread, slice and toast a few extra baguettes, then top them with anything you like. There is also this one for you if you decide to cut back on the carbs.

Ingredients:     Cooking Time: 15 mins

FOR THE TOMATOES

4 tbsp. extra-virgin olive oil

2 cloves garlic, sliced

4 large tomatoes, diced

1/4  sliced basil

2 tbsp vinegar

1 tsp salt

Pinch of crushed red pepper flakes

FOR THE BREAD

1 large baguette, sliced ¼" thick on the bias

Extra-virgin olive oil, for brushing

2 cloves garlic, halved

 Preparation:

To prepare marinated tomatoes, warm oil in a medium skillet over medium heat. Add the garlic and simmer for 2 to 4 minutes, or until it turns lightly yellow. Remove from heat and allow to cool.

Combine tomatoes, basil, vinegar, salt, and red pepper flakes in a large bowl. Stir together the skillet's oil and garlic after adding them. Wait at least 30 minutes before serving.

Toast bread while you wait: 400° oven preheat. Bread should be placed on a sizable baking sheet after being lightly oiled on both sides. Bread should be toasted for 10 to 15 minutes, flipping halfway through, until golden. Bread should be allowed to cool for five minutes before applying a garlic clove rub to the tops.

Just before serving, spoon tomatoes on top of the toast.
