Cucumber, Tomato, and Onion Salad
The longer it sits, the nicer the salad gets. To give the tomato and cucumber time to soak up the dressing, prepare it the morning before serving. Just wait until the very end to add the herbs to keep them vibrant and fresh.
Ingredients: Cooking Time: 15 mins
1/4 c extra-virgin olive oil
2 tbsp vinegar
2 tsp salt
1/4 tsp garlic powder
1/4 tsp freshly ground black pepper
4 cherry tomatoes halved
1 English cucumber, quartered lengthwise and sliced
1/2 medium red onion, thinly sliced
1/2 roughly chopped fresh herbs (such as basil, cilantro,
dill, mint, and/or parsley)
Preparation:
Mix the oil, vinegar, salt, garlic powder, and black pepper
in a large bowl. To mix, add the tomatoes, cucumber, and onion.
Place in the refrigerator for up to 12 hours or at least 15
minutes at room temperature. Salad should be topped with herbs before serving.
